Majik Mermaid Bites

My goal this month is live the low sugar life thanks to @suddenlysugarfree ❤️ Lowering your sugar intake will leave you feeling more energetic and alert, and eliminate those urges for mid-afternoon naps! Every ingredient in this naturally sweet, no-bake treat is brimming with beautifying vitamins and minerals! These blue majik mermaid bars I adapted from @vibrantandpure  will satisfy your sweet tooth (with only 3 dates) and provide you with all the nutrients to leave your skin glowing!

P.S. If you’re curious about Coconut Butter… It’s incredible! It’s simply puréed coconut meat! I love the brand Artisana Organics.

INGREDIENTS:

BLUE LAYER

  • 1/2 cup coconut butter
  • 1/4 teaspoon E3 live blue majik powder

SEA GREEN LAYER

  • 1/2 cup coconut butter
  • 1 pitted medjool date
  • 1/4 teaspoon spirulina
  • 1 tablespoon chia seeds
  • 1/2 teaspoon coconut oil
  • 1 scoop vanilla protein powder (or vanilla extract)

CINNAMON HEMP WALNUT BUTTER LAYER (OPTIONAL)

  • 1 1/2 cup raw walnuts
  • 2 teaspoons cinnamon
  • 1/2 teaspoon coconut oil
  • 2 tablespoons hemp seeds
  • 2 pitted medjool dates

First, create the bottom two layers:

For the sea green layer:

I melted the coconut butter and oil together, then added a date, spirulina, protein powder, and chia seeds to the food processor and blended until smooth. The coconut butter sometimes doesn’t actually melt, it just softens, this is okay.

For the cinnamon hemp walnut butter:

In a food processor or chopper, process 1 1/2 cups of raw walnuts. You might need to stop, scrape down, and keep processing for a few minutes until you have the texture of a nut butter. Next, add cinnamon, hemp seeds, and dates. Scrape out of the processor and store in a glass jar in the fridge.

Next, Layer.

Starting with the walnut crust, cover the bottom of a square glass dish or scoop individual portions into each mold of a silicone ice cube tray. Next, layer in the sea green mixture. Finally, add the blue layer.

For the blue layer:

For this layer, I melted the coconut butter and blended it by itself in order create a thinner consistency and pour it over the bites to make a smooth top layer. After evenly distributing the softened coconut butter, I dusted the top with blue majik and swirled designs with the back of a spoon. This way, I was able to create sort of a marbled look with the blue and the white.

Freeze for 1-2 hours, sprinkle with coconut (I also used bee pollen and hemp seeds), cut and serve!
