Delicious Parsnip Fries

It’s been over a month since we made our New Years resolutions, and the inevitable cravings are popping up again. One craving I always hear about is for french fries. Sweet potato fries are a common alternative, but to get that perfect crispy exterior and french fry look, try baked Parsnip fries. This recipe is low fodmap (another way of saying gentle and not irritating on the tummy), and seasonal since Parsnips are grown in January.. so you can check ‘eat seasonally’ off your goals list.IMG_3419

I simply:
•slice 2 parsnips into thin strips lengthwise, to look like french fries •toss in a bowl with 2 Tbs of olive oil, dried thyme, basil, sea salt and pepper to taste
•roast on 400 degrees for 30 min or until golden brown and crispy (flipping halfway through) •top with fresh chopped basil or parsleyIMG_3421
•I whip up a delicious dipping sauce to accompany the fries. In a blender, add an avocado, 1/2 cup of olive oil, a handful of fresh basil, the juice of half a lemon, and two tbs of water for thinning. Blend, and voila! The healthiest most vibrant condiment you ever did see!IMG_3420
